From 23:30 New Year celebration will continue with live music until 05:00

24:00 Happy New Year Latvia with amazing fireworks of Riga

Tower of vegetable chips with beet puree, goat cheese and goat’s milk caviar with honey

 

Fish appetizer

 

Tuna rolls filled with vegetable tartar, served with scallop caponata, vassabi mayonnaise,
whole-grain ciabatta crouton and wassabi ice cream and teriyaki jelly

 

Meat appetizer

 

Under pressure cooked rabbit meat, served with a slowly cooked apricot,
rabbit and duck liver mousse and pistachio crumbs

 

Soup

 

New Year chicken soup, served with vegetables, mushrooms and quail egg

 

Fish main course

 

Fillet of red snapper fish, served with slowly cooked fennel, pak-choi salad in white wine, caramelized in champagne young carrots

and zucchini mash with tomato chips and olive dust

 

Granita between courses

 

Cucumber-lemon granita, served with a fermented cucumber and mint

 

Meat main course

 

Ballotine from three kind of poultry, served with apple-mustard puree,

potato basket filled with chestnut-carrot puree, slowly cooked parsnip and

chicken Demi Glass sauce with pieces of "Foie grass"

 

Dessert

 

Carrot pie served with fresh cheese vanilla cream, carrot buttons, cinnamon ice-cream,

white wine sauce from raisins, carrot jelly and raspberry dust
